She's credited with creating fajitas and now she has her own day in the City of Houston

HOUSTON — Leave it to Houston to have a day dedicated to Mexican food.

Nov. 12 is now the "Original Ninfa's Day" in Houston.

Mayor Sylvester Turner honored and recognized the 50th anniversary of the iconic restaurant.

Mama Ninfa Laurenzo is credited with grilling skirt steak and putting the sizzling beef inside a handmade flour tortilla.

The tacos al carbon would eventually be called fajitas and would become a staple of Tex-Mex cuisine.
