Healthy lunch recipes for working parents and their kids

These grab-and-go bento box recipes pack in healthy greens and veggies.

HOUSTON — If you make a school lunch for the kids, make sure to whip one up for yourself, too!

These grab-and-go bento box recipes pack in healthy greens and veggies. The recipe comes from YouTube star Kristina Bucaram who lives in Houston. They are all vegan approved!

Ingredients:

  • Tahini
  • Lemon Juice
  • Water
  • Salt
  • Cucumber noodles (buy them in the store, or spiral yourself)
  • Shredded carrots
  • Tomatoes
  • Olives
  • Lettuce

Instructions:

  1. Whisk together tahini, lemon juice, water, and a pinch of salt. Make however much you want!
  2. In a bowl, mix together cucumber noodles, carrots and tomatoes. You can also add cilantro.
  3. Pour tahini lemon dressing on top.
  4. Toss salad. This is one compartment of your bento box.
  5. Keep remaining dressing in another compartment with the shredded lettuce. You can now make another mini salad as a snack during the afternoon.
  6. In the last compartment, drop in some olives.
  7. Pack it up and head out the door!
