Texas Gulf Shrimp Ceviche

½ cup diced red onion

Juice of 2 limes

1 teaspoon extra-virgin olive oil

Salt and pepper to taste

1 pound jumbo Texas Gulf Shrimp, cooked, peeled and chopped

1 small avocado, peeled and chopped

1 cup Fischer & Wieser's Das Peach Haus Peach Salsa

1 tomato, diced

1 jalapeño, diced

1 tablespoon chopped cilantro

Tortilla chips

In a bowl, combine the red onion with the lime juice, olive oil, salt and pepper; let marinate for at least 5 minutes. In a large bowl, combine shrimp, avocado, Peach Salsa, tomato and jalapeño. Add the marinated onion mixture and toss with cilantro to coat. Serve with tortilla chips. Serves 4.

Peach & Tomato Salad

½ cup Fischer & Wieser’s Charred Peach Bourbon Sauce

½ cup balsamic vinegar

¼ cup extra-virgin olive oil

6 ripe peaches, pitted and cut into wedges

2 pounds tomatoes, cut into wedges

1 cup thinly sliced red onion

1 cup crumbled feta cheese

1 cup pecan halves, toasted

½ cup torn fresh basil leaves

Make the dressing by mixing the sauce, vinegar and olive oil in a large bowl. Add all remaining ingredients except the basil and toss to coat. Top with basil and serve immediately. Serves 10-12

Texas Peach & Ginger Sangria

2 cups Fischer & Wieser’s Old Fashioned Peach Preserves

1 cup peach schnapps

1 cup peach-flavored vodka

1 (750 ml) bottles dry white wine

1 (750 ml) bottle sparkling peach wine

2 cups ginger ale

Fresh fruit, including peaches, sliced

Using a hand-mixer, combine the spread with the schnapps and vodka in a large festive bowl. Then add the wines, ginger ale and fresh fruit. Chill in the refrigerator or add ice cubes. Serve with a ladle.
