Underbelly chef helps you upgrade Thanksgiving leftovers

Thanksgiving is right around the corner, but what are you going to do with the leftovers the day after?

“Nothing. Just sleep,” said Fernando Leyva. “I go into a sleeping coma after all the food.”

Chef Chris Shepherd at Houston's famous Underbelly has three rules to live by the day after Thanksgiving.

“Quick. Easy. Fast,” Shepherd said.

This award-winning chef is keeping it light and tasty with a turkey stir-fry, incorporating a piping hot pan, some oil, your favorite leftover raw veggies, and some turkey.

Cook that up together, add your final touches and you're ready to eat your leftovers.

“Eat, eat, eat, all you can now, and then take a break until December 25,” Leyva said.

Mongolian Turkey
Sauce:
½ cup soy sauce
1 tablespoon sambal
¼ cup brown sugar
¼ cup rice wine vinegar
2 tablespoons hoisin
2 tablespoons mirin
1 teaspoon ginger powder
1 teaspoon garlic powder
1 teaspoon pepper
 
6 oz turkey
8 oz leftover vegetables
Toasted peanuts
Mint
Cilantro
Basil
 
Combine sauce ingredients and blend.
Saute vegetables and turkey. Season.
Add sauce
Reduce until thick (1-2 minutes)
Spoon onto plate.
Garnish with herbs and peanuts
