Recipe for Zucchini Bread - Low Fat
1 Cup Vegetable Oil
3 Eggs
1 Cup Sugar
2 Cups Zucchini (grated)
1 8 oz. can Pineapple (drain juice)
3 Cups Flour
1 1/2 tsp Cinnamon
1 tsp baking soda
3/4 tsp nutmeg
1 Cup raisins
1 Cup Walnuts
1 tsp Vanilla
Cream oil, sugar, eggs (one at a time) set aside. Mix flour, soda, cinnamon, nutmeg and alternative into cream mix with pineapple then flour mixture. Add zucchini, raisins, walnuts and vanilla. Bake 350.
