Cost Comparisons of Two Meals
1) Creole and 2) Chicken with Cranberry Mustard Sauce in enough quantity to cook for two families. Here is the comparison chart:
Creole
When purchased for 2 families--The meal cost approximately $11.00 per family. (Efficiencies were in splitting the onion, celery bunch, green pepper, bacon package and Andouille sausage.)
When purchased for 1 family-- The meal cost approximately $17.00 per family.
Chicken with Cranberry Mustard Sauce
When purchased for 2 families-The chicken dish cost $9.00 per family. (Efficiencies were in the splitting of cranberry juice, onion, and package of dried cranberries.)
When purchased for 1 family-The chicken dish cost $13.00
Conclusion based on using this concept four days a week (M-Th)
Average cost of cooking together =$10.00 a meal or $40.00 for 4 meals per week
Average cost of cooking alone = $15.00 a meal or $60.00 for 4 meals per week
Savings $20.00 a week, $80.00 a month if switching from cooking alone.
Note: Eating out at $20.00 a day saves about $40.00 a week, save $160.00 a month.
Creole Recipe
4 cups chopped tomatoes with juice (I use canned)
1/4 cup celery, diced finely
1/4 cup green peppers, diced finely
1/2 cup onion, diced finely
1 cup Andouille sausage, diced
1/4 cup hickory smoked bacon, diced finely
1/4 teaspoon each: oregano, thyme, basil, cayenne, salt, white pepper, and black pepper
Tabsco pepper sauce to taste
Saute bacon until crisp. Add Andouille sausage and saute for 5 inutes. Add celery, green peppers and onions. Saute until soft, about 10 minutes. Add spice mix, tomatoes and cook for 45 minutes. Season to taste with Tabasco. Serve over rice.
