Heart Healthy Fish in Parchment
Halibut en Papillote
Serves 4
4 Mahi mahi or halibut fillets
¼Cup Sliced celery
2 Green onions, sliced
4 Tbsp Chopped Italian parsley or cilantro
1 Cup Julienned carrots
4 Tbsp Lime juice
1 Medium Red bell pepper, thinly sliced
Salt and pepper to taste
Preheat oven to 400°.
Cut four large heart shapes of parchment paper, large enough to enclose each fish fillet completely.
Place one piece of fish on one half of a parchment heart.
Repeat for remaining 3 pieces of halibut.
Evenly distribute the vegetables and parsley over the fish.
Drizzle each with a tablespoon of lime juice.
Sprinkle with salt and pepper.
Enclose the fish and seal edges of packet by tightly folding the edges in small increments.
Place on a large baking sheet, and bake about 15 minutes.
Open packet before serving.
Serve with a small amount of cilantro lime butter.
