The Dining Diva Makes

“Fun Summer Drinks”

(Non-alcoholic)

Peachy Bellini

Adapted from Epicurious.com

Serves 4

½Cup Peach concentrate or puree*, chilled

3 Cups Chilled sparkling cider

Fresh raspberries to garnish

Divide the peach puree among champagne flutes. Pour in sparkling cider and garnish with raspberries. Serve at once.

Mango Margarita

Serves 4-6

12 oz Can Frozen Limeade (we prefer Minute Maid)

2 oz Orange juice

¾Can Water

1 Large Mango, peeled and diced

Ice to fill blender

Rimming salt

Lime slices

Place all ingredients in a blender. Fill with ice. Blend until smooth and pour into glasses rimmed with salt. Garnish with a lime slice.

Ice Cream Soda with Lime, Mint and Ginger

Serves 4

Syrup:

¾Cup Sugar

½Cup Lime juice

½cup Chopped mint leaves

1 Tbsp Minced fresh ginger

Drink:

3 Cups Chilled sparkling water or ginger ale

1 pt Vanilla ice cream or frozen yogurt

Lime slices to garnish

Mint sprigs to garnish

In a saucepan combine the syrup ingredients. Bring to a boil over medium high heat. Reduce heat and simmer 5 minutes. Remove from heat, strain through a fine mesh sieve, and chill the syrup. (Can be stored in the refrigerator for up to one week.)

To prepare the drinks, place 3-4 tablespoons chilled syrup in each glass. Add about ¾ cup chilled sparkling water or ginger ale. Stir to combine. Top with a scoop of ice cream or yogurt and garnish with lime slices and fresh mint sprigs.

Pina Colada

Serves 2

2/3 Cup Pineapple juice

6 Tbsp Cream of coconut (like Coco Lopez)

3 Tbsp Lemon juice

Ice

Pineapple and maraschino to garnish

Toasted coconut to rim glass

Place the pineapple juice, cream of coconut, and lemon juice in a cocktail shaker. Fill with ice. Shake until the shaker is frosty. Pour into rimmed hurricane glasses filled with ice. Enjoy garnished with a pineapple chunk and maraschino cherry!
