Bourbon Street Kabobs
1 lb boneless, skinless chicken breast (cut into 1" chunks)
Pineapple Chunks - fresh or canned (cut into 1"chunks)
Red Bell Pepper (cut into 1" squares)
Honey - liquefied over low heat (1 cup)
Quality Bourbon (1/4 cup) or more if you prefer...
8 wooden skewers - (pre-soaked in water at least 2 hours) - preferrably overnight
Pre-heat grill to medium high or pre-heat broiler. Brush and oil all of the ingredients. Now skewer them on the wooden skewers. For each skewer, use 2 pieces marinated chicken, one piece of bell pepper, and one piece of pineapple. Place the prepared skewers on the grill(or under the broiler and cook for about 5 minutes or until the chicken is no longer pink inside. After the skewers are done, season with salt and pepper and remove from heat. Place kabobs on serving platter and serve.

(this is recipe is to taste. It is usually made extra sweet because the ice will balance out the flavor.)
