BEEF AND BASEBALL
Sweet Hawaiian Mini Burgers
Ingredients
1 lb. 95% lean ground beef chuck
4 Tbsp. Worcestershire sauce
4 canned pineapple slices
12 Hawaiian sweet or small whole-wheat dinner rolls, split
lettuce
Sauce
1/4 cup barbecue sauce
1/4 cup pineapple preserves
1 Tbsp. packed brown sugar
Instructions
Combine ground beef and Worcestershire sauce in medium bowl, mixing lightly but thoroughly. Shape into twelve 1/2-inch thick mini patties. Set aside.
Combine sauce ingredients in small saucepan; bring to a boil over medium heat, stirring frequently. Remove from heat.
Place pineapple slices on rack in broiler; brush with sauce. Place pan in oven so surface of pineapple is 3 to 4 inches from heat. Broil 4 minutes, turning once and brushing with sauce. Remove pineapple; keep warm.
Place patties on rack in broiler pan so surface of beef is 3 to 4 inches from heat. Broil 7 to 8 minutes to medium (160°F) doneness, until beef is not pink in center and juices show no pink color, turning once and brushing burgers with remaining sauce after turning.
Cut each pineapple slice into thirds. Line bottom of each roll with lettuce; top with burger, then with a pineapple piece. Close sandwiches.

Grilling Tips: We’ll be using a grill pan, which is great for indoor grilling, but when grilling outdoors you want to follow a few simple steps to prepare your grill:
Prepare charcoal for grilling. When coals are medium, ash-covered (about 30 minutes), spread in single layer and check cooking temperature. Position cooking grid over coals. To check the temperature use a grill surface thermometer, or cautiously hold the palm of your hand above the coals at cooking height. Count the number of seconds you can hold your hand in that position before the heat forces you to pull it away; 4 seconds for medium heat.
Once your grill pan or grill is ready, season beef hot dogs and hamburgers straight from refrigerator with herbs or spices as desired and place on the pan or on the cooking grid directly over coals.
Grill beef hot dogs over medium high heat for 10 to 12 minutes, until they reach an internal temperature of 165 degrees. For hamburgers, grill, uncovered, 13 to 15 minutes until they reach an internal temperature of 160 degrees. Turn the hamburgers occasionally with a long-handled spatula – you don’t want to pierce the burger with a fork or tongs.
Use an instant-read thermometer inserted horizontally into the side of hot dogs and hamburgers.
