  • 4 habanero peppers
  • 2 cups mango preserves or peach preserves or spread
  • 2 cups crushed pineapple
  • Juice of 2 key limes
  • 4 teaspoons sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon cider vinegar
  • 1 red bell pepper, chopped
  • 4 green onions, finely chopped

This recipe requires refrigeration time

Pre-heat the boiler to 425 degrees

Arrange the habanero peppers on a baking sheet

Broil for 8 minutes or until charred on all sides, turning frequently

Let stand until cool

Finely chop the habanero peppers, discarding the skin, membranes, and seeds

Combine the preserves, pineapple, lime, sugar, salt, and vinegar in a bowl and mix well

Stir in the habanero peppers, bell pepper, and green onions

Serve chilled with tortilla chips

Always wear gloves when handling habanero peppers, as they can seriously burn the skin

For a thinner consistency, heat the preserves in a saucepan prior to mixing
