Diane Henderiks' Hummus Mashed Potatoes

Ingredients:

3 pounds Yukon Gold potatoes; peeled & quartered

1/4 cup reduced fat cream cheese; softened

3/4 cup Sabra Classic Hummus

1 tablespoon olive oil

1/4 cup low fat milk

salt and pepper

Directions:

Place potatoes into a large pot and cover with water.

Bring to a boil and cook for about 20 minutes or until a knife slides through them easily.

Drain, return to pot and add cream cheese, hummus and olive oil.

Mash with potato masher and add milk as needed to achieve desired consistency.

Season to taste with salt and pepper.

Enjoy!
