Banana-Coconut French Toast
1-2 ripe bananas
1 1/4 cups unsweetened coconut milk
1/2 tablespoon ground flax or ground chia seeds
1/4 teaspoon cinnamon
1/4 teaspoon salt
4-5 slices whole wheat bread
1/2 teaspoon vanilla extract
1-2 tablespoons coconut oil or vegan butter
Date syrup or maple syrup (for topping)
Optional extra toppings: fresh fruit, desssicated coconut, jam or compote
First make the mixture to soak the bread in. In a large, shallow bowl, mash the banana to a smooth paste. Then add the salt, coconut milk, ground flax, cinnamon, and vanilla extract.
Preheat a skillet on the stove to medium heat. To this add a generous amount of vegan butter or coconut oil. Preheat your oven too, to low-medium heat.
Dredge your slices of bread in the coconut-banana mixture. Let each side sit for 5-10 seconds, then fry immediately. Cook each side for 3-4 minutes, or until golden-brown. Keep going till you’ve fried all the bread, adding more coconut oil to the pan or adjusting the heat if necessary. Keep the fried pieces warm in the oven.
Serve as soon as possible with your favorite syrup and toppings.
