Soppin Top Sirloins
2 Prime or Angus top sirloin steaks-1 ½ inch
2 tbsp Ottavio Private Unfiltered Olive Oil
2 tbsp Adam’s Reserve House Rub
1/2cup Texas on The Plate Soppin Sauce
Pre-heat oven to 450 degrees F. Coat steaks with Adam’s Rub. Heat an all metal skillet or cast iron skillet on high heat.
Add olive oil to skillet, and sear steak for 2 minutes on one side only. Flip steak to other side, and place steak and skillet in oven for 3-4 minutes only.
Carefully remove skillet from oven, brush Soppin Sauce on steak, and allow steak to rest for 5 minutes. Serve!
Bacon Jammed Green Beans
1 bag HEB SELECT EXTRA FINE GREEN BEANS
2 TBSP Better Than Good Bacon Jam
½ yellow sweet onion-finely diced
½ Cup Sliced Almonds
½ tsp sea salt
2 tbsp Ottavio Olive Oil
Heat skillet on med heat, add oil. Sauté onion for 1 minute, just to sweat them. Add bacon and continue to sauté for 1 ½ minutes. Add green beans and sauté 3 minutes or until slightly golden brown, and finish with Bacon Jam, almonds and sea salt.
Bacon Vinaigrette Over Greens
3 tbsp Better Than Good Bacon Jam
½ cup Ottavio Unfiltered Olive Oil
¼ cup Apple Cider or Rice Vinegar
½ tsp sea salt ½ tsp black pepper
1 Bag Spring Mix
1 cup Champagne Tomatoes
½ cup Diced Red Onion
½ cup Crumbled Queso Fresco Cheese or Gorgonzola Cheese
Whisk ingredients together in bowl and toss with Spring mix, tomatoes, onions, and cheese.
