Mexican Cheese and Chicken Bake
Makes 6 servings
¼ - ½ cup butter or margarine
¼ tsp. pepper
6 (3-4 oz. skinned boned chicken breast halves
1 (6 oz) can French fried onion rings crushed
1 T olive oil
1 large seeded chopped tomato
1 (4 oz) drained canned mushrooms (drained)
1/3 cup chopped yellow pepper
1/3 cup sliced green pimento stuffed olives (can use salad olives)
½ tsp. dried oregano
½ cup + shredded Monterey Jack cheese
Place butter in a 10 X 6 X 2 baking dish. Melt on high for 55 seconds. Dip chicken in the butter and cover with crushed onion bits. Place on waxed paper until all pieces covered. Put chicken back in baking dish, and cover with the waxed paper. (Thickest part of chicken to the outside) Microwave on high for 10 to 12 minutes. Rotate if necessary. Do not overcook! Chicken continues to cook when it stands.
Place remaining ingredients except for the cheese in a 1 quart dish and cover with plastic wrap. Microwave 4-6 minutes on high. Drain.
Spoon mixture on the chicken. Sprinkle with the cheese, and cover with the waxed paper again. Microwave on high for 2-3 minutes or until cheese melts.
Let stand uncovered for 2 minutes before serving.
Banana - Caramel Pie
¼ + 1 T butter or margarine
1 1/3 cup (1 inside packet) finely crushed graham cracker crumbs
½ cup + 2 T firmly packed brown sugar (divided)
2 T cornstarch
¼ tsp. salt
1 ½ c. (1 can) evaporated milk
1 egg yolk
2 ½ T butter or margarine
2 tsp. vanilla extract
2 medium bananas peeled and sliced
½ cup whipping cream whipped w/ ¼ c powdered sugar, Whipped topping, OR aerosol can topping
toffee candy bits
Place ¼ c. and 1T butter in the microwaveable pie pan. Microwave uncovered for 1 minute on HIGH or until melted. Run butter around plate to coat. Stir in crumbs and 2 T brown sugar until mixed well. Press into the plate. Microwave on HIGH for 2 minutes. Turn after 1 minute if necessary. Cool completely.
Mix remaining sugar, cornstarch and salt in a 1 ½ quart glass bowl. gradually add milk and microwave uncovered for 4 – 5 minutes until thickened. Stir every 2 minutes.
Beat egg yolk until lemon colored and thickened. Stirring constantly, with a whisk if possible, add milk mixture. About ¼ th first, then the rest.
Return to the glass bowl, and reduce heat to Medium (70%). Microwave uncovered 11/2 minutes. Stir in butter until melted and then vanilla.
Pour over bananas sliced in the bottom of the pie crust and chill for at least 5 hours until set.
Pipe or spread topping over the pie and serve
