Bourbon Balls

1 6-ounce package (1 cup) Nestle semi-sweet chocolate chips

3 tablespoons of corn syrup (such as light Karo)

1/2 cup bourbon

2 1/2 cups vanilla wafter crumbs(make from box of vanilla wafers)

1/2 cup sifted confectioners 

1 cup finely chopped nuts (walnuts or pecans) I usually chop in food processor.

granulated sugar (to roll balls in after)



*Over hot (almost boiling) water, melt chocolate chips; remove from heat

(a double boiler) Boil the water, then add chips & turn down heat slightly. This will still melt the chips, but won't burn them.) 

*Blend in corn syrup & bourbon.

*In large bowl, combine vanilla wafer crumbs (Use a food processor, or try a rolling pin or large glass to crush the cookies.) 

Mix well. If too liquidous, add more vanilla wafers. If too dry, add more Bourbon. 

Let stand 30 mins. 

*Form into 1-inch balls. (Use a melon ball scoop in granulated sugar. 

Balls may be stored in covered container for several days to let flavors mingle!

Makes 4 1/2 dozen 1-inch balls.
