- 4t butter
- 3t heavy cream divided
- 1/2t coarse salt
- 1t sugar
- 1/8t cayenne pepper
- 2lbs sweet potatoes, peeled and cut into ¼ inch slices
- ½ cup shredded smoked gouda cheese
- 6 strips bacon, cooked crisp and crumbled
- 2 green onions, chopped
Heat butter, 2T cream, salt, sugar, cayenne and sweet potatoes in a large sauté pan over medium low heat.
Coat potatoes. Reduce heat to low, cover and cook until potatoes are very tender. 30-40 minutes.
Remove from heat, add the cheese and the remaining cream.
Cover for 1 to 2 minutes until the cheese melts.
Mix thoroughly to mash potatoes.
Top with the bacon and green onions just before serving.
