Pappasito’s Cilantro Rice

Serves 4-6

Pappasito’s Cilantro Rice is made by tossing steamed basmati rice with a classic chimichurri made from cilantro, parsley and mint. This rice is a great accompaniment for any meal and is easily thrown together in about 30 minutes. What’s also nice about this recipe is that the chimichurri can be used alone; it goes great with grilled meats, fish, and vegetables.  At Pappasito’s we serve it with our Filet Mignon Fajitas and drizzle it over grilled vegetables.  

Ingredients:

Basmati Rice, cooked           4 cups                 

Chimichurri, recipe below    ¼ cup

Limes

Directions:

Cook basmati rice according to package instructions and keep warm.

While the rice is still warm, use a spatula to mix in ¼ cup prepared chimichurri. Add more or less to your liking and serve with limes!

Chimichurri

Makes about 2 cups

Ingredients:

Parsley, chopped                     ¼ cup

Cilantro, chopped                    ¼ cup

Mint, chopped                         ¼ cup

Garlic, minced                         1 TBSP

Yellow onion, minced             ¼ cup

Lime juice                                ¼ cup

Extra Virgin Olive oil               ¾ cup

Kosher salt                               ½ tsp

Black pepper                           ¼ tsp

Directions:

Place all ingredients in a mixing bowl and stir, using a spatula, until completely incorporated.
