Bacon Jam  Wrapped Chicken
Prep Time:20 minutes
Serves :6-8

Ingredients:
1 Pkg Hill Country Fair Chicken Tenders
½ bottle Better Than Good Bacon Jam
2-4 tbsp Adam’s Reserve Southwest Ancho SearNCrust
Ottavio Private Reserve Extra Virgin Olive Oil
24-30 Slices Fresh HEB Bacon

Directions:
Coat with olive oil and season chicken tenders. Stretch bacon strip.
Double loop it on one end, and spiral wrap each tender all the way to the other end.
Tuck end of bacon strip under last loop.
Grill on med heat, continuously rotating for 8-10 minutes or until chicken is no longer pink in center.
Brush with Bacon Jam last minute before removing from grill.
Let rest for 5 minutes.

Southwest Turkey Chili- LOW FAT
Serves 4-6

Ingredients:
1 jar Cookwell Co. 2-STEP CHILI MIX
3 tbsp Ottavio Private Reserve Olive Oil
1 carton CENTRAL MARKET CHICKEN BROTH
1 pound Ground Turkey- white or dark meat
1 zucchini-diced
1 yellow squash-diced
1 can red kidney beans-rinsed
1can yellow and white corn-rinsed
1 can black beans –rinsed
½ package matchstick carrots-chopped

Directions:
Heat large soup pot on med high heat for 1 minute.
Add 3 tbsp olive oil; add carrots and sauté until they begin to turn golden brown. Add squash, and zucchini, and continue to sauté until ALL veggies are browned and tender.
Add beans, corn, CHILI MIX, and broth. Mix and simmer. Season with salt and pepper to taste.

TIP: 2-STEP CHILI MIX IS VEGITARIAN APPROVED, SO YOU MAY LEAVE OUT MEAT ALL TOGETHER.

Korean Glazed BBQ Meatballs

Ingredients:
1 small bag HEB Fully Cooked Meatballs-Homestyle
1 tbsp Adam’s Reserve House Rub
1 tbsp Ottavio Oil
½ jar Fisher & Weiser Korean Style BBQ

Directions:
Microwave meatballs for 6 minutes.
Remove, slice in halves, and heat a large skillet on med high heat.
Add oil to skillet, and sauté meatballs for 3-4 minutes, until golden brown.
Add BBQ Sauce, House Rub  & Stir
 

Low Fat Beefy Cheese Dip With Seasoned Chips
Serves 4-6

Ingredients:
1 jar Cookwell Company Queso – Escabeche (fat free)
1 cup extra lean ground beef-cooked and drained
1 cup fat free greek yogurt
1 diced avocado
1 can diced tomatoes
Chips:
1 bag of corn or veggie chips
1 tbsp Adam’s Reserve southwest rub

Directions:
Brown beef, drain excess fat, and mix with jar of queso, yogurt, avocado, diced tomatoes.
Add seasoning to bag of chips and toss!
Also, use queso for enchiladas, brocoli chicken stir fry, or add to soups for low calorie richness.
