- 8oz steak
- Olive oil (for generously coating pan)
- (Coat steak with oil, salt and pepper)
- 2 Roma (Plum) tomatoes
- 3 cloves garlic (finely minced)
- 2T Olive oil
- Pinch of salt
- Basil for garnish
Wash tomatoes and slice length-wise. Place face down on a sheet pan and place in broiler close to heat for three to five minutes (or until skin blackens and starts to peel back). Remove from broiler, remove skin and place in bowl. Cover with plastic and let cool.
Meanwhile, on low flame, gently heat olive oil and place garlic in pan. Saute until very lightly brown. Dice tomatoes, place in pan with garlic, add pinch of salt, stir and let reduce.
Then, heat olive oil in pan on high heat until you see a bit of smoke. Gently place steak in pan to brown and gently flip onto other side. Be careful not to drop and splash oil. Cook approximately one minute on both sides.
Take pan off stove and place in pre heated 400 degree oven until desired doneness. Pull pan from oven and place meat on cutting board. Let it sit for a few minutes.
Place some pizzaiola sauce on plate, slice steak diagonally on top of sauce. Put some sauce on the steak and add basil for garnish.
