  • 1 (5-6lbs) chicken
  • 1 orange quartered
  • 1 lemon quartered
  • 1 head garlic
Mix glaze together in a bowl or cup and stir. Position the rack in the center of the oven and preheat to 400 degrees. Wash and pat dry the chicken and sprinkle all over with salt, pepper and garlic powder. Stuff the cavity with the citrus and garlic halves. Tie the legs together with string to help hold its shape. Place a rack in a large roasting pan. Place chicken, breast side up on the rack in the pan. Roast for 1 hour, basting occasionally with the glaze and add chicken stock to the bottom of the pan to prevent pan drippings from burning. Continue roasting until an instant-read meat thermometer inserted into the innermost part of the thigh registers 170 degrees. Transfer the chicken to a platter.
  • ¼ cup fresh OJ
  • ¼ cup fresh lemon juice
  • 3 cloves garlic, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh rosemary, chopped
  • Sea salt, fresh ground pepper


Tent with foil while making the sauce. Place the same roasting pan over medium heat. Whisk stock in the pan and simmer until sauce is reduced to 1 cup, stirring often about 3-4 minutes. Strain into a 2-cup measuring cup and discard the solids. Spoon the fat from the top of the sauce. Serve chicken with the pan sauce.

  • 1 turkey wing
  • 1 cup low-sodium chicken broth
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Zest of Lemon

In a large skillet on medium heat, saute bacon and seasonings for 10-15 minutes. Wash and rinsed greens and boil until bright green. Then add greens to seasoning and bacon. Reduce and cover for 20-30 minutes or until greens are tender.
  • 4 medium yams, peeled and cut anyway
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1/2 stick unsalted butter
  • Pinch Nutmeg
In a large pot on medium heat, add yams and cook until soft for 20 minutes. Drain yams. In the same pot on low heat, add sugar, vanilla, butter and nutmeg and cook for 20-25 minutes.
