Ingredients:
- 1lb dried black eyed peas
- 6 cups water
- 6 rashers bacon, cut in one inch pieces
- 1/2 medium yellow onion (diced)
- 1 clove garlic (minced)
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon oregano
- chopped jalapeno, for garnish
- chopped chives, for garnish
Directions:
Rinse peas well
Soak peas in water overnight and drain
In a large, heavy-bottomed pot, gently cook bacon over medium heat until fat begins to render
Add onion and garlic and cook, stirring regularly, until onion becomes transparent
Stir in drained peas and seasonings and add enough water to cover by two inches
Bring to boil then reduce heat to simmer. Cook 3 hours or until tender, adding water as needed to keep peas covered
When tender, transfer one cup of peas with some cooking liquid to blender or food processor
Puree until smooth and stir back into pot to slightly thicken. Consistency should only be slightly soupy
