Grilled Pizza with Steak and Arugula Recipe

Pizza (1):
  • 8oz grilled ribeye steak (thinly sliced)
  • 8oz grated mozzarella
  • 2T crumbled goat cheese
  • 2oz arugula
  • 1/4 thinly sliced red onion
  • Extra Virgin Olive Oil
  • Salt
  • 1c warm water
  • 4.5 cups of flour
  • 1 T active dry yeast
  • .25 cup sugar
  • 1tsp salt
  • 1c flour reserved
  • Extra Virgin Olive Oil


Add 1T yeast to cup of warm water (approx 100 degrees or comfortable to touch)
Add .25 cup of sugar, gently and briefly stir, let stand 10 min (will start to bubble and foam)
Meanwhile, add 1tsp salt to flour, then add liquid (water, yeast, sugar) to flour, mix with your hands, work together, should be sticky and stretchy, add flour if necessary from reserved cup
When dough is a smooth consistency, pull out of bowl onto clean, sanitized work space dry and lightly dusted with flour
Knead dough for 8 minutes, shape into ball, place back into a clean well olive oiled bowl, cover with warm damp towel and set aside for 1 hour  or until dough has doubled in size
Punch, to let air escape, pull out of bowl, knead about a minute and form into ball, cut in half, form two balls, let sit another 30 minutes (or doubled in size) covered with damp towel, then punch again, form into balls and start to shape into pizza crust, for grilling roll or spread out evenly (for oven-pinch edges or fold over at edges to form crust while baking)
Cover with plastic immediately until used.  
This will make 2 - 12" thin crust pizzas.  Can be frozen for future use
OR: Buy dough in the store or use a pre-made pizza crust for your convenience.
Pre heat Grill
Grill ribeye steak and slice thinly.   
Toss arugula and red onion in bowl with a sprinkle of salt and a touch of extra virgin olive oil-set aside
Slide pie crust onto grill, will start to bubble-when starting to get firm and has grill marks on the bottom,
Pull off of grill, gently turn raw side down
On cooked side, sprinkle grated mozzarella evenly on pizza dough 1/2" - 1" from edges to leave room for crust
place steak slices on pizza, sprinkle with goat cheese, top with arugula and red onion place back on grill for 2 minutes or until cheese is melted. 
Pull off grill, drizzle with extra virgin olive oil, slice and serve!
