Brown Rice Tabbouleh Recipe

Ingredients:

  • 2 c cooked brown rice                                                      
  • ¼ c sliced green onions            
  • ¾ c chopped cucumbers                                                   
  • ¼ c olive oil
  • ¾ c chopped tomatoes                                                      
  • ¼ c lemon juice
  • ½ c chopped fresh parsley                                               
  •  ¼ t freshly ground black pepper
  • ¼ c chopped fresh mint leaves

 

 

Directions:

Combine rice, cucumber, tomato, mint, green onions, olive oil, lemon juice, and pepper in large bowl. Toss well and chill.
 
Serve as a salad or spoon into whole wheat pita.
