Salmon Bites with Creamy Sauce


  • 1 (6 ounce) cup of fresh salmon, chopped lightly with fork
  • 1 egg
  • 1⁄4 cup celery cut in fine pieces
  • 1⁄4 cup sliced green onion
  • 1⁄4 bell pepper cut in fine pieces
  • 1 tablespoon LEZET! Creole seasoning or your favorite Creole seasoning
  • 1/2 teaspoon garlic powder
  • Wheat Crackers (season as well)
  • 3 tablespoons olive oil


  • 2 tablespoons of vegan butter or butter substitute
  • 1 tablespoon of Chicken bouillon granules
  • 3 tablespoons of tomato sauce
  • less than a ¼ of low fat milk

In a medium bowl, mix together the salmon, egg, celery, green onion, Creole
Seasoning and garlic powder. Let sit for 10-15 minutes in refrigerator.
Form the mixture into small ball bites and roll in wheat crackers to coat.
Place balls on a lightly greased pan and cook uncovered in oven for 20-25
minutes until golden brown. Turn rolls to opposite side after 15 minutes.
In a separate small skillet add melt 2 table spoons of butter, add chicken
bouillon granules stir until dissolved, add tomato sauce and milk. Stir. Add a
pinch or two of flour to thicken sauce. Pour over Salmon bites.


Blackened Shrimp Skews


  • 12 Fresh jumbo shrimp, peeled and deveined
  • Bell pepper
  • Sweet Onion
  • 1/3 cup Paprika
  • Pinch Cayenne Pepper
  • 1tbsp Black Pepper
  • 1 tbsp Thyme
  • 1 tsp Sage
  • 1 tsp Cumin powder
  • 1 tsp Onion Powder
  • ¼ tsp Creole seasoning
  • Vegan Butter

1. Cut you veggies to your liking in order to proportionally placed on skew.
2. In a separate bowl, mix paprika, cayenne pepper, black pepper, thyme,
sage, cumin powder, onion powder and creole seasoning.
3. Lightly brush each shrimp with softened vegan butter and place shrimp in
mixture and shake
4. Place shrimp and veggies on skew and grill


Tomato Basil Sliders


  • Large Tomato
  • Basil
  • Virgin Olive oil
  • Red wine vinegar
  • Light Mozzarella cheese

1. Slice tomato in thick pieces
2. Place basil on tomato
3. Sprinkle olive oil and red wine vinegar
4. Add cheese on top
