Dressing Ingredients:
- 1 ½ teaspoons caraway seeds, lightly crushed
- ¼ cup cider vinegar
- 2 tablespoons Vegetable Oil
- ¼ teaspoon freshly ground black pepper, or more, to taste
Salad Ingredients:
- 2 ½ pounds potatoes, cooked, peeled, cubed & kept warm
- 1 cup coarsely shredded carrots
- ½ cup chopped sweet onion or shallots
- ¼ cup minced fresh parsley
Directions:
1. Combine all the dressing ingredients in a large bowl.
2. Add the potatoes, carrots, onion & Parsley. Toss the salad gently to combine all the ingredients. Cover the salad with plastic wrap, & chill it.
