Perfect for Pasta Sauce - Oregano, Basil, Thyme, and Parsley - Just toss them in a large skillet with a bunch of sliced tomatoes and let it cook
1/4 cup of light olive oil
4 lbs fresh tomatoes, sliced
1 medium onion, chopped
4 cloves garlic, chopped
1/4 cup of fresh oregano
1/4 cup of fresh Thyme
1/4 cup fresh Basil, chopped
4 sprigs Parsley
1 teaspoon salt
grated parmesan cheese
To cook pasta sauce, heat olive oil over medium heat in a large iron skillet or heavy saucepan.
Add onion, thyme, oregano, basil, garlic and salt.
Saute until onion is tender, approximately 5 minutes.
Add tomato, parsley; medium heat to a simmer, uncovered for about 40 minutes, stirring often or until sauce has thickened.
Serve over cooked spaghetti or other Italian pasta and top with Parmesan cheese.
Baking and Grilling - Sage, Thyme, Rosemary and Mint – put them in your bread, cakes, burger patties or even tie them to you grilled items (Sage!)
2 tablespoons finely chopped garlic
2 tablespoons finely chopped sage
1/2 teaspoon salt, more to taste
1 pound ground turkey
Freshly ground black pepper to taste
4 whole wheat buns or rolls, toasted
Mash garlic, sage and salt together in a bowl or with a mortar and pestle. Knead mixture into the turkey and season with pepper. Form into 4 patties and transfer to a plate. Cover and chill for 30 minutes to allow the flavors to blend. Heat a non-stick skillet over medium heat. Add burgers and cook until firm and lightly browned, 4 to 5 minutes on each side. Check that turkey is completely cooked through. Serve on toasted rolls with a squeeze of lime.
