Pork Medallions

Pork Medallions in Creamy Bacon/Cherry Glaze

Serves 4-6

Cook Time 20 minutes



1 pound Pork Tenderloin-sliced about ¾ inch thick

1 tbsp Adam’s Reserve House Rub

Ottavio Private Reserve olive Oil

½ jar Better Than Good Bacon Jam

1 cup Frozen Cherries

1 cup Greek Yogurt Or Heavy Whipping Cream



1. Season pork evenly with House Rub.

2.Heat large skillet on medium heat, add 2 tbsp of  olive oil

3. Cook pork for about 3 minutes each side, or until internal temp reaches 150. Remove and set aside.

4. Place frozen cherries in skillet, with 2 tbsp of olive oil, and sauté for about 10 minutes, allowing them to break down.

5. Add bacon jam and cream OR yogurt, mix and heat. Serve over pork.
