Recipe: Chef Philippe Schmit's classic hot dog

In honor of the 4th of July, Chef Philippe Schmit stopped by the studio to demonstrate his updated version of the classic hot dog.  Chef Philippe also offered some grilling tips, which he will feature at the Capella Pedregal Food & Wine Festival in Cabo San Lucas later this month.

 

Philippe’s Moroccan Style Hot Dogs                                 

Ingredients:

4 Oval brioche buns, lightly toasted from the inside

4 Merguez sausages, roasted 3 minutes at 350F

½ cup seedless cucumber, diced

½ cup Plum tomatoes, diced

6 Baby pearl onions, sliced and pickled

½ cup Feta cheese, diced

½ cup seedless Black olives nicoise

1 tbsp Oregano (flowers only)

2 tbsp Virgin olive oil

(*)Harissa sauce:

 

 

Harissa paste

Red bell peppers

onion

1/4

oz

jalapenos

1/8

oz

garlic

1/4

oz

olive oil

1/8

oz

chili sauce

coriander powder                                            a pinch      

cumin powder                                                   a pinch

Oz

 

 

Cook onions and garlic first in olive oil, add bell peppers and cook 3 more minute at a low heat, add spices first then pour all ingredients, salt to taste and cook for 20 minutes then mix in a food blender until very smooth.

Fill each bun with a merguez sausage, drizzle some harissa on the sausage, then add the mix of vegetables and cheese with a little virgin olive oil. Bon appétit!
