Chili (16 servings):
Ingredients
4 lbs of ground bison
2 pkgs of /wick Folwer's 2-Alarm chili mix (do not use the masa or salt packets)
2 lbs tomatoes
2 jalepenos diced
1 pablano diced
3 onions diced
16 oz beef or chicken broth
sea salt, pepper, garlic and extra chili powder and/or cumin to taste
Directions
In a soup or chili pot, cook tomatoes in a little bit of water until split open and mushy. In another pan, brown the ground meat - drain off fat, if desired. Add all ingredients to soup/chili pot and cook for 2-3 hours. Season as desired. Add additional water or broth as necessary.
Artichoke Dip
Ingredients
14 oz artichokes (do not use marinated)
1 cup grated (organic) parmesan cheese
1 cup safflower mayonnaise (or homemade - do not use Kraft or Hellmans of any variety due to soybean oil)
Cholula or Tabasco sauce (optional)
Chopped cooked shrimp or sausage (optional)
Directions
Chop up artichokes in blender or food processor or by hand. Mix all ingredients in a bowl. Place in 8X8 baking dish and bake at 350 degrees for 20-30 mins or until bubbling.
Protein Powder Brownies
Ingredients
Makes 16 brownies
1 cup or 74 gr chocolate protein powder
¼ cup oats, ground
8 oz 70% dark chocolate, coarsely chopped
½ cup coconut oil (or butter)
3/4 cup firmly packed brown sugar (or baking Stevia ® use half)
2 teaspoons vanilla extract
4 large eggs (or flax eggs or 8 egg whites)
½ teaspoon salt
½ teaspoon baking powder
1 teaspoon espresso powder (optional, to enhance chocolate taste)
