iFest Recipe: Marinade/chimichuri sauce and caipirinhas

Chimichuri Sauce


1 cup of olive oil, mild

½ cup lemon juice

1 cup fresh chopped parsley

1/3 cup fresh chopped cilantro

1 tbl spoon dry oregano

2 tbl spoons minced garlic

1 tbl spoon red crushed pepper

Salt to taste


In a mixing bowl add all the ingredients and stir, let it rest for at least 30 minutes

Can be kept in the refrigerator for 1 week in a glass container



Caipirinha Brazilian Cocktail



1 ½ tablespoons granulated white sugar

1 fresh lime cut in small triangles

1 oz. Cachaca, Brazilian Sugar Cane Rum



In a rocks glass or small tumbler glass, muddle the sugar and lime together. Add the 1 oz. Cachaca. Fill glass with cubed ice and pour above ingredients over ice and shake vigorously. Garnish with a fresh lime wheel.


For a twist, try a flavored caipirinha in passion fruit, strawberry, mango, guava, pomegranate or peach.
