HOUSTON—Food truck Friday is all about finger lickin’ good chicken! Put all pretenses aside, and get ready to surrender to the mess.
We caught up with Sticky’s Chicken, the newest food truck in Houston at Midtown Mobile Cuisine, Houston’s newest food park. Patsy Vivares launched the truck to showcase her father’s favorite dish—a secret recipe he created after eating at a wing joint.
“After he ate, he came out and was like I can do something better than this!” Patsy explained.
That was ten years ago. Now, the whole family’s in on it. Patsy’s brother Benson and Mom, Joy, man the kitchen. The secret family recipe starts with twice-fried chicken wings. It ends with a generous dousing of tangy, sweet, garlicky sauce – a tribute to the Vivares’ Filipino heritage. The wings live up to their name – the sticky sauce will have you licking your fingers.
“The flavor is kind of like a Teriyaki slash.. it’s kind of sweet, and it maybe has like kind of a hit of Asian twist to it,” customer Christian Dipasupil explains.
The family has no formal culinary training (“We just like to eat”), but their passion for food comes out in their signature dish.
“This is not just about money; this is like from my heart. It’s amazing,” Ceferino Vivares, the family patriarch explains.
So you can bet, Sticky’s Chicken will stick around.
“It’s everything that you would want in chicken wings,” says customer Lan Tran.
